Plus I don't want to make stuff that takes a ton of dishes (I'm the dishwasher) or time (I'm busy hanging out my laundry on clotheslines).
But don't you love this? My fresh chives from the market came wrapped with a pussy willow branch. wrapped so well I could hardly get them out.
So. What do you cook that is easy and doesn't take a lot of ingredients? Please share!

one of our favorites is chinese "noodles". so bad for you, but so good.
you'll need:
bacon
noodles (i prefer angel hair- but whatev)
eggs
peas
cook up some bacon-as much or little as you'd like
meanwhile boil pasta
chop up cooked bacon bits and toss into pasta with chopped hardboiled eggs (we also like to put in a vegetable-pref. peas)
using bacon grease in pan-add water, beef boullion or whatever seasonings you have on hand. salt, pepper, onion powder, garlic powder, and soy sauce. do they have soy sauce there?
poor over pasta. toss and serve.

Mom told me that Jude man is allergic to cereal! Poor thing. We just give Jakey fruit and veggies from cans. They are nice and soft (he only has 2 teeth!) and he devours them.

ReplyDeleteI gotta break out my bean recipe book and my vegetarian stuff...that's the easiest to cook with minimal ingredients...hmm...I've been having a hard time with food, too. Too much brain power for me to muster right now. :)
ReplyDeleteSo, my fallback recipe is an easy black bean recipe - or any bean would probably do ok (ha ha Paul!) that can be used on tortillas whole or mushed up or Nora just loves to eat them by themselves. Just boil black beans in water (or boullion or broth or stock - they give more flavor) with some onions and garlic and salt - a hefty amount of salt. You can put the onions and garlic in raw or you can saute them first. then you just cook til they are tender (usually an hour or so) and then you can drain the liquid or just scoop them out. Or eat them like soup.
If you add bacon do the beans, you can make a nice black bean soup.
There's a yummy lentil salad that is basically just lentils, a vinegarette (of your choosing - nick always makes ours and it usually includes thyme) - we throw in sundried tomatoes and feta, but whatever would be good. Nora loves that, too.
I'll get out my recipe books tonight and send you some more...
I had the same problem the night I had to feed the boys. Once you have a fully stocked kitchen and freezer, it will get easier. I'm dreaming of your pelmeni and the yummy Georgian khachapuri.
ReplyDeleteTry draniki (potato pancakes). Grate potatoes(To get more veggies in, I always add finely chopped green onions, grated: carrots, broccoli stem, cauliflower stem or parsnip as half and the other half potatoes but you can do it all with potatoes). Add an egg or two if large batch, seasoning (I use Mivina from Belarus-chicken boullion with other spices/dried herbs), salt n pepper. Mix well. Add flour until it's thick. Cook like pancakes in oil, but spread them out thin so they will cook through well. Eat with sour cream if you are Belarusian or ketchup if you are American. (or ? if you are Georgian/Armenian?)
